Vegetarian mantis steamed to the sounds of mantras.
You will have to tinker, but the result is worth it.
Components
For the test:
250 g of flour
1 egg
1/2 cup of water
salt
red or black pepper
For the filling:
2 large boiled potatoes
400 g of mushrooms
asafetida
sambar – masala
zira
fresh dill
For the sauce:
sour cream
dill
tamarind (optional)
green onions
garam masala
- Add egg, salt, pepper to the flour, mix, gradually pour in water. You need to knead the dough very well so that there are no lumps, then mold it into a ball and put it in a plastic bag for 40 minutes.
- While the dough is resting, prepare the filling.
- Mash the potatoes . Cut the mushrooms into small cubes (no more than beans) and fry over low heat in oil, adding salt, one and a half tsp. asafetida, half tsp. stars, a third tsp. sambar masala. After that, mix the mushrooms with potatoes, add finely chopped dill. The filling is ready!
- Take the dough out of the bag, put it on a floured table and roll it out thinly. Now that the dough is rolled out, you need to cut circles out of it. For this, I used a bowl, 15 centimeters in diameter. Each cut out circle needs to be dipped in flour on both sides.
- Let’s sculpt! Stuffing (about 1.5 teaspoons) is placed in the circle of manta and then it is pinched from 4 sides, as in the picture.
- The products are steamed (steamer) for 25-30 minutes.
- The sauce for mantis is prepared very simply: mix sour cream (200 ml) with finely crushed tamarind (if you have a blender, you can mix sour cream with tamarind), add dill, garam masala to taste and mix again. You can do without tamarind.
- Vegetarian Mantis are served on the table covered with sauce and sprinkled with green onions.
