Coconut oil in cooking: healthy homemade mayonnaise and granola

Today, you and I plan to cook granola and homemade mayonnaise based on coconut oil.

Try healthy homemade mayonnaise
  • Mix 4 egg yolks, 1 tablespoon of apple cider vinegar and ½ teaspoon of dried mustard in a blender.
  • Then slowly add ½ cup melted coconut oil and ½ cup olive oil to the resulting mixture. Do not add the oil too quickly, otherwise the mayonnaise will come out lumpy. But even if you did screw up, all is not lost.
  • Just add ½ tablespoon of tahini (or a handful of sesame) to the mayonnaise. and mix everything until smooth.
Topping for baked sweet potatoes

Place coconut oil on top of baked sweet potatoes instead of regular oil, then sprinkle everything with cinnamon. In addition, you can safely use coconut oil to prepare ordinary fried potatoes, which can also be seasoned with rosemary and sea salt or sesame.

Replace unhealthy fats when baking

You can safely use coconut oil in baking! Just take it according to the recipe in the same amount as vegetable or butter. If only to avoid smoke in the kitchen, on low and medium heat. In any case, this step will benefit your cakes and donuts.

For cookies, a pie with a ruddy crust, puff or grated dough, in the preparation of which you need cold butter, put the coconut oil in the refrigerator beforehand.

In the same way, you can grease baking sheets and cake tins with coconut oil, then your pastry will acquire a golden color, and it will easily come out of the baking form.

Make homemade granola

Crunchy homemade granola with heart-healthy nuts is a great breakfast dish and a guest star in this season’s hit, fresh fruit salad.


In a large bowl, mix together:
3 cups old-fashioned oatmeal
1 cup slivered almonds
2 teaspoons cinnamon
1/3 cup honey or maple syrup, or 1/3 cup coconut sugar
1/2 cup melted coconut oil

Place everything on a baking sheet and bake at 350 degrees for 5-7 minutes, then gently stir the future granola in the oven, and continue to bake it for another 5-10 minutes.
Turn off the oven and let the granola sit in the heat for another 30 minutes, then take the granola out of the oven and start to crunch 🙂

You can use coconut oil to seal the pores in the eggshell, thus keeping the eggs fresh in the fridge.
