Vegan lentil cutlets are hearty, healthy and very tasty!
Ingredients
red lentils – 350 ml
purified water – 500 ml
onion – 1 pc
carrot – 1 pc
broccoli – 1 small head
greens – 1 bunch
root ginger – 2 cm
coconut oil for frying
zira seeds – 1 tsp
asafetida – a pinch
sea or black Himalayan salt
black pepper
Preparation
- Lentils for vegan meatballs are soaked in purified cold water for 3-4 hours.
- Cut broccoli, onions and greens very finely, grate carrots and ginger on a fine grater.
- Drain the water from the lentils and grind them with a blender to a puree state.
- Mix the vegetables with the lentil puree, add salt, pepper, chopped greens, mix thoroughly, form medium-sized cutlets, 1.5 cm thick (wet your hands , if the minced meat is sticky).
- Heat a frying pan over medium heat, pour coconut oil and fry the “cutlets” on both sides until golden brown for about 2-3 minutes.
- Serve to table with your favorite side dish.
