Today we prepared PUMPKIN PANCAKES WITH APPLES CARAMELIZED IN BEER
- the pumpkin pancake dough recipe is more or less traditional, but its vegan version is also possible
- if desired, you can use soft salty cheese in the filling together with apples
Ingredients for pumpkin pancakes:
2 cups of coconut milk, diluted with water (1 part milk to 3 parts water)
2 tbsp. melted coconut oil
2 eggs
½ cup pumpkin puree
1½ cups plain flour
1 tbsp. coconut sugar
½ tsp. baking powder for dough
½ tsp. salt
1 tsp. ¼ tsp. ground ginger
¼ tsp. ground nutmeg
Vanilla as desired
For the filling:
2 tbsp. coconut oil
2- 3 apples, peeled and diced
¼ cup shredded coconut sugar
½ cup light unfiltered beer
½ tsp. ground cinnamon
For topping – 100-200 g of melted grated cocoa beans or dark chocolate
Preparation
Step #1
- Beat eggs, add pumpkin puree and vanilla to them.
- Pour warm milk with oil into the pumpkin mixture, stirring slowly.
- In a separate mix flour, sugar, baking powder, salt, cinnamon, ginger and nutmeg.
- pour in wet ingredients into dry and thoroughly mix everything. Give the dough 15 minutes rest.
- Bake pancakes in your favorite pan, greasing it with oil if necessary.
Step #2
- In a deep pan, saute the apples with butter, coconut sugar, beer and cinnamon, simmering over low heat until the beer turns into a thick sauce.
- Melt the grated cocoa by steaming or in the microwave.
- Fold the pancakes in a quarter, put caramelized apples on them and cover all this aromatic beauty with chocolate.
