Rice porridge on coconut milk with quinoa and lime juice

Coconut Lime Rice takes cilantro porridge up a notch, and by making a habit of cooking porridge with coconut milk, you’ll learn how to create the perfect sweet and savory side dishes!

You will need

  • 1/2 cup white rice
  • 1/2 cup quinoa
  • 2 cups Organic coconut milk
  • 3 tablespoons of lime juice
  • 1/2 cup chopped fresh cilantro or parsley
  • Salt to taste

  1. Rinse the rice several times under running water. It is better to soak quinoa overnight in cold water to remove the bitterness.
  2. Combine rice, quinoa, coconut milk and salt in a saucepan and bring to a boil over high or medium heat.
  3. li> Reduce the heat to low and cook the rice for 15-20 minutes or until desired doneness.
  4. After 15 minutes, the rice will be al dente, and after 20 – it will be soft, and the coconut milk will be completely absorbed.
  5. Add lime juice and cilantro to the porridge or simply sprinkle with green onion.
