Coconut Lime Rice takes cilantro porridge up a notch, and by making a habit of cooking porridge with coconut milk, you’ll learn how to create the perfect sweet and savory side dishes!
You will need
- 1/2 cup white rice
- 1/2 cup quinoa
- 2 cups Organic coconut milk
- 3 tablespoons of lime juice
- 1/2 cup chopped fresh cilantro or parsley
- Salt to taste

- Rinse the rice several times under running water. It is better to soak quinoa overnight in cold water to remove the bitterness.
- Combine rice, quinoa, coconut milk and salt in a saucepan and bring to a boil over high or medium heat.
- li> Reduce the heat to low and cook the rice for 15-20 minutes or until desired doneness.
- After 15 minutes, the rice will be al dente, and after 20 – it will be soft, and the coconut milk will be completely absorbed.
- Add lime juice and cilantro to the porridge or simply sprinkle with green onion.
