Lentil soup with homemade noodles

Lentil soup with homemade noodles is a complex dish. But it is definitely worth the time and effort!

Soup ingredients:Ingredients for noodles:
200 g green lentils
1 large carrot
2 small onions
½ pc. bell pepper
½ tsp coriander (not ground)
4-5 curry leaves
3 tbsp. pulp tamarind
½ tsp. chili pepper
3 tbsp. flour
1 egg
dried herbs:
parsley
dill
basil
oregano
black pepper, crushed peas

We are cooking

Boil 2.5 liters of lentils. water for 20 minutes after boiling.
While the lentils are cooking, prepare the stir-fry and noodles.

Roasting:

  • Grate carrots on a beet grater or grind in a blender
  • Finely chop the onion and fry it over low heat together with the carrot

We prepare noodles:

    null
  • Add an egg, salt, some dried and chopped parsley leaves, dill, basil, oregano, and black pepper to the flour.
  • We mix to a uniform stiff dough, if necessary, you can add flour.
  • We roll out the dough into a very thin cake (1 mm thick) and cut the cake into strips 0.5-1 cm wide; cut the strips in turn to the desired length.

Completion:

  • Fry together with noodles and finely chopped red Bulgarian pepper into a pan with lentils, then add salt to taste, tamarind, chili pepper, coriander, bay leaf.
  • Cook until the noodles are ready.
