Cherry hill cake

We have perfected the old recipe for Cherry hill cake to fit the mood in the family circle
It can be difficult to prepare at the beginning, but the recipe is simple and the cake turns out great, so without a doubt, this cake will soon be among your favorites.

We are posting photos from our culinary family evening, but the photo of Cherry hill cake was taken in the summer. It’s just that this time we didn’t have time to take a photo of the cake – it was immediately licked by the children in front with the cats 😉

So you need to

FOR THE DOUG

800 g – 1 kg of frozen pitted cherries
250 ml of butter or margarine*
250 ml of sour cream
1-2 eggs
+- 500 g of flour
a pinch of salt
½ tsp. soda – extinguish with lemon juice or vinegar
1 vanilla pod or steam a pinch of Star Anise Powder or a pack of fake vanilla from the nearest store

*butter or margarine can be melted before cooking, or rubbed on a large beet grater

FOR CREAM

800 ml – 1 liter of fat sour cream
1 glass ground coconut sugar or regular
1-2 packs of thickener for cream – just in case the sour cream does not thicken.
Beat everything well with a mixer or food processor until smooth.

COOKING
  • Defrost cherries and let excess moisture drain
  • In a large bowl, mix melted oil, eggs, salt and sour cream, gradually adding sifted flour with baking soda and spices
  • All mix thoroughly. The dough should be plastic and soft, so do not “kill” it with flour. To do this, add flour a little at a time until the dough stops grabbing your fingers.

  • Divide the dough into 10 pieces of the same size.
  • Sprinkle the table well with flour.
  • Roll out each piece of dough first lengthwise, about the size of a large baking sheet ** in your oven, then roll out as wide as you can.
  • Place one row of cherries on the edge of each thin piece of dough, and wrap these “tubes”

** some housewives make this cake the size of half a baking sheet, and at the same time divide the dough into 15 pieces, but in our opinion it is too much trouble, besides, it is more difficult to cut such a cake later

Preheat the oven to approximately 200°C
Sprinkle the baking sheet with flour and place 10 cherry tubes on it at once.
Place the tubes in the oven on low to medium heat for 30 minutes or more. As soon as the tubes grow a little and become golden, turn off the oven.

  • Let the tubes cool and at this time make the cream. On a large plate or tray, first put 4 tubes and spread cream on top of them.
  • Put three tubes on top, press them lightly and again smear with cream. Then lay out two more tubes in this way and the last one on top.
  • Grease the cake on all sides with the remaining cream.

If you wish, you can sprinkle Cherry Hill with grated chocolate or nuts but it will be wonderful even without it!
