At the request of those who still haven’t read Elchin Safarli’s book “Recipes of happiness ” (you are in vain) a recipe for a cupcake with the taste of the spicy secrets of the East
You will need:
150 g of butter at room temperature
1 cup of sugar
1.5 cups of white flour
3 eggs
1 tbsp. milk or sour cream
a handful of raisins
5-6 pieces of dried apricots
1 tsp. ground Ceylon cinnamon
½ tsp. baking soda or baking powder
vanilla seeds on the tip of a knife (or a pack of vanillin)
Preparation:
- Crush the dried apricots a little and pour boiling water over them together with the raisins for 10 minutes. Then drain the water.
- Beat the butter with sugar and vanilla.
- Add eggs and milk (sour cream) to the mixture one at a time.
- Sift flour with baking powder into the dough. Stir well.
- Add cinnamon and dried fruit.
- Mix again, put the dough in a mold greased with oil and sprinkled with flour.
- Bake for 45 minutes at a temperature of 180 °C
- You can sprinkle the cake with powdered sugar on top or almond slices for beauty.
- Elchyn Safarli recommended letting the cake stand for 6-8 hours to get the best taste and texture, but we couldn’t wait 😉
