White mushroom curry in the tropics

Cookies made of porcini mushrooms or enjoying local dishes in the tropics

  • about 100 g of dried porcini mushrooms
  • 1 very large bulb
  • 2 tbsp. flour
  • coconut oil
  • salt
  • potatoes 1.5 kg
  • garlic
  1. Boil porcini mushrooms in 2.5 cups of water, cool, chop finely.
  2. Chop the onion.
  3. Heat the oil in a pan, fry the onion, add the mushrooms and cook for about 15 minutes over medium heat, stirring occasionally.

Sauce is being prepared in parallel:

  • Heat 6 tbsp. of coconut oil
  • add to the oil 2 tbsp. flour (with bitter) and fry
  • add mushroom broth
  • bring to a boil over medium heat, stirring constantly
  • after the sauce boils, make a small fire and cook for another 5 minutes, of course – constantly stirring.

Garnish: cut the potatoes into small pieces (I cut 8 medium-sized potatoes), boil them.
Heat oil in a pan, fry finely chopped garlic in it and fry the potatoes in it.

Serve together, garnished with herbs.
