Vegan cookies with quinoa and dried cranberries

As promised, we are sharing the recipe for Vegan cookies with quinoa and dried cranberries, for which even the sun looks more closely than usual at our kitchen windows.

You will need

150 g of flour ground in a blender quinoa
50 g of almond flour or almonds ground in a blender
25 g coconut sugar
2 tbsp. peanut paste or urbecha from any nuts
1 “flax egg” – 1 tbsp. flax flour + 4 tbsp. water (let stand for 5 minutes)
½ tsp. soda, quench with lemon juice
a pinch of sea salt
a handful of dried cranberries or raisins
chopped grated cocoa beans or chocolate drops – optional

  • Combine all the ingredients together, add cranberries, grated cocoa beans last, and knead the dough well.
  • According to your tastes and wishes, form cookies and bake them for 15 minutes, you know very well at which temperature – 180 °C.

What’s even better about the recipe is that it’s easy to turn the sweet cookies into healthy loaves. Simply, instead of sugar, chocolate and cranberries, add a little more salt (we played with black Himalayan salt), as well as spices – Italian herbs, smoked paprika or dried chopped tomatoes. Voila!
