As promised, we are sharing the recipe for Vegan cookies with quinoa and dried cranberries, for which even the sun looks more closely than usual at our kitchen windows.
You will need
150 g of flour ground in a blender quinoa
50 g of almond flour or almonds ground in a blender
25 g coconut sugar
2 tbsp. peanut paste or urbecha from any nuts
1 “flax egg” – 1 tbsp. flax flour + 4 tbsp. water (let stand for 5 minutes)
½ tsp. soda, quench with lemon juice
a pinch of sea salt
a handful of dried cranberries or raisins
chopped grated cocoa beans or chocolate drops – optional

Let’s cook

- Combine all the ingredients together, add cranberries, grated cocoa beans last, and knead the dough well.
- According to your tastes and wishes, form cookies and bake them for 15 minutes, you know very well at which temperature – 180 °C.

What’s even better about the recipe is that it’s easy to turn the sweet cookies into healthy loaves. Simply, instead of sugar, chocolate and cranberries, add a little more salt (we played with black Himalayan salt), as well as spices – Italian herbs, smoked paprika or dried chopped tomatoes. Voila!
