Tropical rice from South India

An easy-to-prepare nutritious dish that can be served both separately and as a side dish. So, TROPICAL RICE from South India

Ingredients for two servings:

Basmati rice – 1 tea cup
Coconut – 1/4 medium size (meat)
Pineapple – 1/2 small size
Ginger root 2 thumbs thick
Coconut oil – 5 tbsp
curry leaves ground – 2 pinches or 5-7 whole pieces
fennel – a pinch
coriander – 1/2 tsp.
cardamom – 1/4 tsp. or 5 whole boxes (broken)
ground turmeric – a pinch br>salt

  • Cook rice with turmeric.
  • Heat coconut oil in a pan, add peeled finely chopped ginger root, finely chopped coconut, chopped curry leaves, fennel, coriander, cardamom.
  • Fry the vegetables with spices over high heat, stirring actively for a few minutes.
  • Add pineapple cut into small squares and continue to cook over high heat for 7 minutes, stirring constantly. Coconut oil can be added if necessary.
  • Mix with rice, decorate.
