Spicy quinoa оn coconut milk

We have been looking for an interesting recipe for cooking quinoa in the Masale style for a long time. So they found it – a wonderful, tasty and spicy side dish turned out. So, Spicy quinoa оn coconut milk

You will need:

2 tbsp. coconut oil
2 medium onions – cut into small cubes
2 cloves of garlic – crush or rub
0.5 tsp. ground dried ginger, or freshly grated manunia root
2 tsp. cumin
2 tsp. ground coriander
1-2 tsp. ground turmeric
2 tsp. garam masala
1 tsp. black mustard seeds
250 g quinoa – pre-wash the groats and cover them with cold water for several hours, drain the water before cooking
400 ml (1 jar) coconut milk
200 ml of vegetable broth or just boiling water
juice of ½ lemon
salt

Spicy quinoa оn coconut milk
  • In a heavy-bottomed pot or pan, heat the coconut oil and, over medium heat, sauté the onion in the oil until translucent and soft.
  • Add garlic, ginger, cumin, coriander, turmeric, garam masala and mustard to the onion and fry the spices for another 5 minutes.
  • Next, pour quinoa into a pot, pour in coconut milk, lemon juice and vegetable broth. Simmer everything on low/medium heat for the next 20 minutes or until all the liquid has evaporated.
  • At this point, a lot depends on the cookware. Sometimes you need to carefully stir the quinoa all the time, and if you guessed with a cauldron, then as soon as the liquid boils – stir in the cereal, put on a small fire, cover with a lid and forget about it for 20 minutes. In the end, the texture of the quinoa may be a little sticky or crumbly. Both options are good.
  • Serve Spicy quinoa оn coconut milk a side dish with grilled vegetables or enjoy as is.
