Spicy honey and nut cake

Another family recipe from the Masale cookbook: Spicy honey and nut cake

– easy to prepare
– without eggs
– with a small amount of vegetable oil


1 glass of boiling water
black leaf tea *
2,5 glasses flour
1 tbsp. honey
1 tbsp. coconut sugar or other dark sugar – for those who like sweeter
3 tbsp. coconut oil or any other butter to your taste
1.5 tbsp. chopped walnuts
1 tsp. soda
1 tsp. ground Ceylon cinnamon **
6 pcs. cloves – grind in a mortar
lemon zest
dates, candied fruit, raisins – as desired, but no more than a handful

*Today we preferred Dimbula tea, but Pottotuva is also beautiful
**This cupcake really likes almost all bright spices. It goes well with ground cardamom, bodian and even a pinch of hot cayenne pepper.

✔Brew 1 glass of tea, cool to room temperature, strain the tea leaves.
✔Dissolve honey and sugar in the tea.
✔Mix the flour with soda, nuts, lemon peel and spices.
✔B pour sweetened tea and melted coconut oil into the dry mixture.
✔Mix everything thoroughly once more and put it in an oiled, suitable size form with high sides.
Bake the cupcake until ready in an oven preheated to 180 degrees.

It is very tasty to enjoy such a cupcake with cold juice, karkade tea or with cranberry sauce.
