Holiday vegan cake with dried fruits

This beautiful and delicious vegan cake recipe with dried fruits will delight family and guests. A wonderful treat for the festive table – eaten in one fell swoop!

If you suddenly want to eat something special, homemade, fragrant and healthy, we offer the recipe for this magical cupcake. The soft, slightly moist pulp attracts with its amazing aroma and coziness, which will not leave anyone indifferent. In addition, the recipe is extremely simple.

Components:

2 bananas
juice and peel of one orange
6-7 pitted dates
5 tablespoons coconut oil
3 tbsp. aquafaba (vegetable egg white substitute)
1 vanilla pod
0.5 tsp soda
0.5 tsp. ground cinnamon
0.5 tsp. dried ground ginger
120 g wheat or rye whole grain flour
50 g of coconut sugar
raisins and candied fruit – optional

  • Soak raisins and candied fruit in boiling water for 15 minutes. Drain the water.
  • Combine all the dry ingredients: flour, ginger, cinnamon, soda, sugar.
  • Mix with a blender to a homogeneous consistency: bananas, orange juice, zest, butter, vanilla extract, aquafaba and dates.
  • Add raisins and candied fruit. Sift the dry ingredients and mix everything thoroughly.
  • Grease the baking form with oil.
  • Preheat the oven to 180°C.
  • Fill the form with the dough a little more than half (it should rise in the oven)
  • Bake for 45-60 minutes
  • Readiness can be checked with a wooden skewer* (after immersion it should come out without any remaining raw dough). If the top of the cake has already darkened well, and there are still remnants of raw dough on the skewer, then the cake should be covered with moistened parchment and left in the oven for a little longer.
