We would like to share with you a recipe for blueberry ice cream with coconut milk
You will need:
- 1½ cups raw cashews
- 1 jar coconut milk ( 400 ml )
- 3 tbsp. spoons coconut oil, melted
- ½ cup of maple syrup
- 1 tsp. vanilla extract
- a pinch of sea salt
- 2 cups of frozen blueberries
- a cup cocoa powder or Carob
Preparation:
- Soak the cashews overnight.
- Combine: cashews, coconut milk, coconut oil, maple syrup, vanilla extract and sea salt in a blender until smooth.
- To make blueberry or chocolate ice cream, blend frozen blueberries in a bowl or add cocoa powder to the base (if desired).
- Then the vegan ice cream goes into the fridge overnight
