Recipe for cosmically delicious coconut vegan ice cream, which you can make in 3 versions: vanilla, blueberry, chocolate.
You will need:
- 1½ cups raw cashews
- 1 jar coconut milk ( 400ml )
- 3 tbsp. spoons coconut oil, melted
- ½ cup of maple syrup
- 1 tsp. vanilla extract
- pinch of sea salt
- 2 cups frozen blueberries
- cup cocoa powder or kerob
Preparation:
- Soak the cashews overnight.
- Blend: cashews, coconut milk, coconut oil, maple syrup, vanilla extract, and sea salt in a blender until smooth.
- To make blueberry or chocolate ice cream, mix frozen blueberries in a bowl or add cocoa powder to the base (if desired).
- Next, the vegan ice cream goes into the refrigerator overnight.
