Just rice with gravy in the Kerala style.
An interesting solution instead of boring porridge. Try it. Maybe this is your recipe.
Ingredients for 2 servings:
- rice 1/2 cup
- large potatoes
- small carrots
- garlic 1 clove
- walnuts or cashews 50 g
- raisins 1 tbsp.
- coconut oil
- turmeric on the tip of a knife
- curry leaves to taste
- cinnamon 1 stick
- coriander 1/2 tsp
- white pepper to taste
- cardamom 1 box
- fennel pinch
- cumin pinch
- salt
- sugar
- Boil the rice and season it with coconut oil.
- Peel, cut and cook the carrots.
- While the carrots are cooking, peel and cut the potatoes (there should be 3 times more than carrots), add to the carrots and add enough water to cover the vegetables.
- Add to the vegetables turmeric, fennel, cumin, cardamom, coriander, white pepper (depending on the desired spiciness), leaves curry, a stick of cinnamon, a few cloves of garlic, salt.
- When the vegetables are ready, remove them from the heat and grind them with a blender, having previously removed the cinnamon.
- Add paprika, chopped nuts, raisins, a pinch of sugar and put on the fire again for 5-10 minutes.
- Place the rice in a cone on a plate, make a hole in the middle, put vegetable sauce in it and decorate with curry leaves or herbs
