NAVARATHA KOORMA
Ingredients:
coconut oil 4 tablespoons
Cumin seeds 1/2 tsp
finely chopped or ground ginger< br> curry leaves
cilantro
onions
carrots
potatoes
cauliflower
tomatoes
parsley or other aromatic herbs
coriander 1 tsp.
garam masala 1/2 tsp.
chili pepper 1/2 tsp.
turmeric 1/2 tsp.
banana
slice of pineapple
mango powder ( or candied cherries) 1/2 tsp.
coconut milk
cashew milk 2 tbsp.
milk 0.5 tbsp.
salt
- Heat coconut oil, add cumin, ginger, garlic, curry leaves, finely chopped onions, boiled and finely chopped potatoes, carrots, cauliflower, finely chopped tomatoes, cilantro greens, coriander, garam masala, turmeric, Jira melena, a small banana cut into small pieces, the same amount of pineapple cut into small pieces.
- Add mango powder, coconut milk, cashew milk, milk. Add salt.
- Cook over high heat, stirring constantly for 5-7 minutes.
TOMATO ONION MASALA RICE
Ingredients:
coconut oil 4 tbsp.
black mustard 1 tsp.
anise 1/2 tsp.
finely chopped or ground ginger
garlic
chopped paprika 1 tsp .
curry leaves
cinnamon 1 stick
onion
spicy curry 1/2 tsp.
ground chili 1/2 tsp.
turmeric 1/2 tsp.
fresh mint
boiled basmati rice
finely chopped tomatoes
salt
- Heat the coconut oil. Add black mustard, fry until the spice begins to crackle.
- Add anise, ginger, finely chopped garlic, paprika, curry leaves, cinnamon, finely chopped onion, salt, spicy curry, ground chili, turmeric, cilantro and mint greens, boiled basmati, finely chopped tomatoes
- Stirring, cook over high heat for 5 minutes.
BANANA PAYASAM
Ingredients:
coconut oil 3 tbsp.
small thin vermicelli 1 handful
raisins
cardamom 1/2 tsp. or several boxes
sugar 2 tbsp.
vanilla
water 1 tbsp.
milk 1/2 cup
banana
- Fry vermicelli in oil, add cardamom, raisins, sugar, vanilla in parallel.
- Pour 1 tbsp. of water, cook over high heat, stirring constantly for 5-7 minutes.
- Add milk. Cook for a few more minutes over high heat, stirring constantly.
