Granola Vegan cake with chocolate mousse

If you are tired of granola – it’s time to make something new and tasty from it
For your attention, a dessert that is easy to prepare and convenient as nutritious bars. 
Granola Vegan cake with chocolate mousse

You will need:

For the base:
2 ripe bananas
2 cups homemade or store-bought granola 
1 ½ cups oats (whole grains or flakes)
¼ cup coconut oil
½ cup raisins
½ cup coconut flakes or any which chopped nuts
2 tablespoons chia seeds

For the chocolate layer:

2 ripe bananas
1 1/3 cups soft pitted dates (if the dates are dry, just soak them in hot water for 10 minutes, then drain the water before cooking)
¼ cup coconut oil
½ cup cocoa powder
a pinch of salt
1-2 tsp. vanilla extract
coconut sugar optional

Granola Vegan cake with chocolate mousse
  1. Preheat the oven to 180°C.
  2. Mix all the ingredients for the base of the dessert and for the chocolate layer separately using a food processor
  3. Line a 20 cm baking dish with medium or high sides with parchment and spread the layer of granola base on it, pressing and smoothing it with a spoon or just with your hands.
  4. Spread the chocolate mass on the granola layer and flatten it.
  5. Bake in the oven for about 25-30 minutes (if you made a tall dessert, keep it in the oven a little longer).
  6. Top the dessert with granola or nuts and serve warm or chilled.
  7. Enjoy!

Such a dessert can be cut into small pieces and given to children as a healthier alternative to chocolate bars.
