Bananas a popular worldwide fruit crop belong to the Musa genus of the Musaceae family. They grow in the tropical and subtropical zones of more than 130 countries, including Southeast Asia. The Asian continent is the world’s largest producer of bananas, accounting for 54.4% of the world’s production of these fruits.

A fresh banana consists of 75% water. During the drying process up to 86% of the moisture is lost, making “dehydrated” bananas a much more concentrated source of calories and nutrients compared to fresh fruit. They contain four times more fiber, potassium, carbohydrates, sugar and calories. But vitamin B6 is only 6% of the daily norm and about 3% of water-soluble vitamin C, which is particularly sensitive to heat. Therefore, it is recommended to turn to fresh vegetables and fruits for these vitamins.

Most of the dried fruits familiar to us on the Ukrainian market are actually made by soaking the fruits in syrups, boiling them in oil (for a more attractive appearance and additional weight), followed by glazing and the addition of preservatives and flavorings. And this is in the best case. At worst, it’s not dried fruit at all, but we’ll talk about that next time.

Real dried bananas without sugar should be:
  • unattractive in appearance
  • wrinkled
  • yellowish-brown color
  • opaque
  • do not smell of gasoline or smoke
  • smell only of banana and exotic
  • preferably in transparent packaging so that they can be seen before purchase

Dried Ceylon dried fruits from MASALE are definitely authentic, so they fit all the above criteria.

Using dried bananas in cooking
  • Most often such bananas are used as a snack or an additive to a ready-made breakfast – the slices can be further chopped and mixed with cereals or granola.
  • They give a pleasant aroma and an interesting texture to bread and cupcakes
  • Add to salads and to meat dishes (or instead of meat)
  • Compotes, tinctures, and liqueurs are prepared on the basis of dried bananas
