When fried, the taste of ginger changes dramatically, and in this format it is especially loved in India and Sri Lanka: if chopped ginger is fried (usually together with garlic or onions), the hot and spicy taste gives way to a milder, richer taste. Especially North Indian recipes widely use this technique as a basis for delicious sauces for vegetable or meat dishes. During long-term preparation of these dishes, ginger is very harmoniously combined with other aromas and becomes a rather non-specific background taste.
