The taste and aroma of the seeds is strong, spicy, bitter, slightly nutty. Intensifies when rubbing or frying.

Cumin seeds (Jira) – is one of the oldest spices, it was known in ancient Egypt. Cumin is native to the Mediterranean, West Africa and Turkmenistan. Due to the external similarity, cumin and Jira are often confused, but such confusion can spoil your dish. In contrast to the rich bitter aroma of cumin we are used to, the smell of Jira is warm, spicy-nut resinous, and has a relatively sweet taste.

Indian cumin has a delicate, fresh aroma that quickly evaporates, a menthol slightly burning taste.

In Kashmiri Jira, the aroma is more complex, sharp, resinous and camphorous, the taste is bitter, strongly burning to the point of slight numbness.
