Brief description:

Caraway – Carum carvi L. Family of umbrellas – Apiaceae Lindl (Umbelliferae Juss).
Despite the fact that they belong to the same family, cumin seeds must be distinguished from black cumin (kalinji, nigella sowna) by their appearance, composition and taste

Caraway seeds is believed to have made its way from Central Europe to Asia, but it is unclear whether cumin is actually a native of Europe. Today it is mainly cultivated in Finland, the Netherlands, Eastern Europe and Germany, as well as North Africa and most of all – in Egypt.

Caraway is a self-sufficient spice, it does not go well with other spices, with the exception of its “closest relatives”: dill, fennel, anise, coriander.

This is a universal spice. It is often used as an alternative to pepper, because unlike it, cumin also promotes better digestion of food, but at the same time does not irritate the stomach lining.

  • Caraway seeds go well with rice, vegetables, meat, potatoes and legumes.
  • Often used in pickling and pickling products. Due to the characteristics of Caraway, sauerkraut or stewed cabbage with it loses a large part of its specific smell.
  • When marinating herring, cooks also recommend using seeds.
They like Caraway and dairy products – cheeses, cottage cheese and butter
  • Caraway seeds is used to season sauces and jams, is added to tea and kvass, and is used to flavor alcoholic beverages
  • And bread, like other baked goods, in union with Spice acquires an unforgettable aroma and a subtle spicy aftertaste.
  • Caraway is part of such spicy mixtures as: curry, garam masala.
It is one of the five spices in the Bengali panchporan masala.

For the most complete disclosure of the aroma, cumin seeds are pre-fried a little in oil or simply on a dry hot pan.

Caraway seeds is a controversial spice; to many its taste seems dominant and unpleasant, especially for those who are not used to cuisine rich in cumin. Using ground spice is a compromise. Another way is to wrap the seeds in a small piece of linen cloth (or just a tea bag) so that it can be removed before serving.

Caraway as a therapeutic and preventive agent

Although Caraway is a common plant of alpine meadows, it was often grown in medieval mountain monasteries, mainly for its extremely effective laxative, sedative and carminative properties.

  • Caraway is a natural antioxidant that has antioxidant properties
  • It is recommended for respiratory diseases, intestinal spasms and migraine
  • Seeds have long been known as a natural anthelmintic and gastrointestinal stimulant, so they can be found in many medicinal herbs and medicinal preparations.

One of the simplest recipes for this healing tea:
– grind 15 g of seeds thoroughly in a mortar and steam with boiling water (250 ml)
– infuse for no more than five minutes, then drink with a small amount of honey, which will slightly soften the natural bitterness of Caraway

It is better to buy Caraway seeds whole, they keep well for 2-3 years in a hermetically sealed container in a dry, dark place.
